This tasted odd.

Bacon Cheeseburger Soup


6 slices bacon, cut into bite sized pieces

1lb ground beef

1 can diced tomatoes

2 t yellow mustard

4 dill pickle spears, diced

1 1/2 C beef broth

2 C milk

1/4 t crushed red pepper flakes

1/4 t black pepper

1/2 t kosher salt

1 C shredded colby-jack cheese

4 hamburger buns, cut into bite sized pieces


1. Preheat over to 400 degrees.

2. In a large Dutch oven over medium high heat, cook bacon until browned.  Remove bacon and place on a paper towel lined plate to drain.  Remove grease from Dutch oven.

3. Add the ground beef to the pot and cook until browned.  Drain and add bacon back to pan with ground beef.

4.  Add tomatoes (with juice), mustard, pickles, beef broth, milk, red pepper, salt, and pepper.  Simmer over medium-low heat for about 10 minutes, stirring occasionally.

5. While soup is simmering, place hamburger bun pieces on a baking sheet, and bake for about 8-10 minutes.

6.  Add the heavy cream and cheese to the soup.  Heat for 2-3 minutes, until cheese is melted.

7.  Serve soup with hamburger bun croutons.
