Monday’s Mess

I’m implementing themes for my blogposts.

Mondays are officially “Monday’s Mess.”

Mess referring to a military term for a group of people for frequently eat together.

I’ll post about food we’ve had during the past week.

And probably whatever else I feel like posting.

‘Cause “mess” has so many meanings…

Double Chocolate

Banana Bread

3 medium to large very ripe bananas

1/2 C. butter, melted

3/4 C. dark brown sugar

1 large egg, room temperature

1 t. pure vanilla extract

1 t. baking soda

1/4 t. table salt

1/2 t. ground cinnamon

1 C. all-purpose flour

1/2 C. Dutch process cocoa powder

1 C. semisweet chocolate chunks or chips

1. Preheat over to 350°F. Spray a 9 X 5 loaf pan with nonstick cooking spray.

2. Mash bananas in a large bowl. Whisk in melted butter, then brown sugar, egg, and vanilla.

3. Place baking soda, salt, cinnamon, flour, and cocoa powder in a sifter, and sift over wet ingredients.  Stir together with a spoon just until combined.  Fold in chocolate chunks/chips.

4. Pour into prepared pan, and bake 55-60 minutes, or until a tester comes out relatively clean (a little chocolate chip smear is ok).  Cool in pan for 15 minutes, then remove to a wire rack.

Hmm…that kinda makes it sound like we only had one date night in 2006.

We probably didn’t have many more than that, to be honest.

Unless the going to the gym counts as going on a date.

I wasn’t going to post it, but I looked at my blog and how dull my December Daily pages seemed.

I needed to dress things up a bit.

And I need a new process for taking photos of my DD pages.

They look WAY better in person.
